Gnome & Faerie Opens on SE Hawthorne Bringing Botanical Ales, Old-World Plates, and Living Elixirs to Portland
Portland, OR — Gnome & Faerie, an old-world gathering space and botanical taproom pairing a deeply seasonal food program with culinary-driven drinks, is now open at 3257 SE Hawthorne Blvd in Portland, Oregon. Founded by husband-and-wife team Shay and Eva Hosseinion, Gnome & Faerie is an extension of Shay’s long-developing brewery project, Brewed By Gnomes — a beverage program rooted in herbs, flowers, fermentation, ritual, and botanical ales and elixirs designed to blur the line between brewing, apothecary tradition, and old-world gathering culture.
Set inside one of Hawthorne’s most beloved 1891 Victorian homes — and what may be Hawthorne Boulevard’s oldest surviving structure — Gnome & Faerie blends warm tavern energy, botanical atmosphere, and old-world sensibility into a space shaped by fermentation, fire, gathered plants, aging ales, and the slower rhythms of brewing and cooking.
The beverage program is anchored by Brewed By Gnomes’ signature botanical ales — beers infused with herbs, flowers, fruits, teas, mushrooms, and seasonal ingredients that move between brewing and alchemy. Past creations have included a cherry blossom pilsner, elderflower elderberry IPA, lemon balm infusions, mugwort and cardamom dark ales, herbal aperitif-style elixirs, botanical spritzes, shrubs, and thoughtful zero-proof offerings.
The Gnome & Faerie kitchen is now entering a new chapter with Chef José Sabas, whose background bridges family-rooted hospitality, California’s ingredient-driven food culture, and Central European dining traditions. Raised working in his father’s restaurant, José later honed his craft at Los Angeles’ acclaimed SQIRL before spending time studying and cooking within Central Europe’s bistro and fine dining world. Most recently, he was part of the team at Portland’s beloved G Love.
Chef José’s seasonal old-world farmhouse menu is rooted in rustic European cooking traditions, with select dishes and flavors inspired by the Persian and Central European heritage of owners Shay and Eva Hosseinion. Offerings include Joojeh, a saffron grilled chicken plate; a traditional Czech Klobasek sausage dish; and Sholeh, Gnome & Faerie’s take on a classic Persian rice pudding dessert.
The food is built to live alongside the drinks, creating something transportive: rustic yet refined, grounded yet imaginative. Hearth-inspired cooking, fermentation, herbs, mushrooms, grains, preserved things, smoke, bright sauces, texture, and carefully sourced organic ingredients come together in a style of cooking designed to feel comforting, mysterious, layered, and deeply alive.
While many dishes naturally accommodate gluten-free, dairy-free, vegan, paleo, and refined sugar-conscious diners, those choices emerge from the project’s broader holistic philosophy rather than from restriction itself. Shay and Eva also operate Elderflower Medicine, their holistic medical clinic located upstairs within the same Victorian home, and that perspective quietly informs the food and beverage program’s approach to ingredients, preparation, vitality, and nourishment.
At Gnome & Faerie, guests are invited to step into a slower and more enchanted rhythm. The table is set for Portland’s gnomes and faeries.
